Earl Grey Oolong Chocolate Truffles
Ever wondered what Christmas tastes like in France? To be honest, it often tastes like oysters or foie gras which are many people's no go zone but if you're looking for a less controversial treat, chocolate truffles are a great place to start.
Chocolate truffles are the traditional Holiday treat in many French households. This recipe is very close to the classic one, with the addition of earl grey oolong tea.
The truffles are very low in sugar so you can enjoy them guilt-free. If you are a tea and a chocolate lover, there is simply no reason why you shouldn't try this recipe.
Ingredients
- 125g good quality dark chocolate
- 100g thick cream
- 2 tsp loose Earl Grey Oolong tea
- cocoa powder
Method
- Cut the chocolate into small chunks
- Pour the cream into a small saucepan, add the tea leaves
- Heat the cream over a low heat until it simmers. Press the leaves with the spoon so that they release maximum flavour
- Pour the cream and the leaves over the chocolate through a strainer
- Mix the chocolate and cream until the chocolate melts
- Pour your preparation over a flat surface i.e. a baking sheet
- Put the preparation into the fridge for at least an hour
- Once it has thickened and has plasticine-like texture, roll into small balls
- Roll each ball in the cocoa powder
- Put back into the fridge
- You can start savoring them on the next day but they can stay in the fridge for some time if you prefer
