How to infuse the Iron Goddess of Mercy oolong tea?
You can check this blog post for the classic Chinese way of infusing oolong tea. In a nutshell, it can be infused multiple times and each subsequent infusion liberates different aromas and tastes.
First infusion
The first infusion has a light yellow colour and prominent milky notes. The pleasant tenderness that it brings lasts forever. It's as if the tea was giving your throat a warm hug.
Second infusion
Delicate citrus notes join the milky notes. The liquid has a slightly darker, honey-like colour. This infusion is a perfectly balanced mix of the sweet - sour - umami tastes. The notes that last the longest are the citrus ones.
Third infusion
The milky notes disappear, the citrus notes become more present. This tea evolves from one subsequent infusion to another like a flower slowly opening up its petals under the morning Sun.
