What is oolong tea?

Contrary to the green tea which is not oxidized and the black tea which is fully oxidized, oolong is partially oxidized. Oolong is mainly produced in China and Taiwan. Almost all of the tea production of Taiwan is that of oolong tea.

How to infuse the Imperial Earl Grey Oolong Tea?

First infusion

The first infusion has a mellow honey-like colour and light citrus and floral notes.

Second infusion

The second infusion is all about citrus. The lemony notes of the Pouchong oolong's second infusion match the bitter-sweet taste of the orange zests. 

Cold brew

This oolong suits itself perfectly for a cold brew (you should cover the leaves with water at ambient temperature and leave for about half an hour). It gives a wonderful light green color with shades  of gold. The taste is dominated by the refreshing citrus notes.
