One of the most famous oolong teas, Ti Kuan Yin or Iron Goddess of Mercy comes from the Fujian region of China. This tea is surrounded by legends that say that, for instance, it was offered by the Goddess of Mercy herself to a tea farmer, Mr. Wei because he took such a good care of her temple.

What is oolong tea?

Contrary to the green tea which is not oxidized and the black tea which is fully oxidized, oolong is partially oxidized. Oolong is mainly produced in China and Taiwan. Almost all of the tea production of Taiwan is that of oolong tea.
