One of the most famous oolong teas, Tie Guan Yin Oolong or Iron Goddess of Mercy comes from the Fujian region of China. This tea is surrounded by legends that say that, for instance, it was offered by the Goddess of Mercy herself to a tea farmer, Mr. Wei because he took such a good care of her temple.

It is light and refreshing with a subtle milky, flowery taste that lasts forever. Like any oolong tea, it can be infused multiple times.

What is oolong tea?

Contrary to the green tea which is not oxidized and the black tea which is fully oxidized, oolong is partially oxidized. Oolong is mainly produced in China and Taiwan. Almost all of the tea production of Taiwan is that of oolong tea.

First infusion

The milky notes disappear, the citrus notes become more present. This tea evolves from one subsequent infusion to another like a flower slowly opening up its petals under the morning Sun.
